WHAT IS HOLLANDAISE SAUCE?

If you’ve devoured Eggs Benedict, its more than likely you’ve enjoyed, rich, creamy, buttery, smooth Hollandaise Sauce. Classic Hollandaise Sauce is an emulsified sauce made by whisking lemon juice and butter with egg yolks over a double boiler.   

Hollandaise Sauce is so divine, it is one of the five Mother Sauces in French cuisine (despite the Dutch name origin) – AKA you need a Hollandaise Sauce recipe in your life — and now you can enjoy it guilt free with this faux HEALTHY Hollandaise Sauce recipe!

I remember the first time I made Hollandaise sauce –  it was wonderfully, rich, creamy and decadent.  I served it over Mozzarella Asparagus Chicken Rotallini and it tasted absolutely divine.

I should have enjoyed it. I should have enjoyed it A LOT.

But with ½ cup butter in only 1 cup Hollandaise sauce, I knew I wasn’t going to be making it again. The taste simply wasn’t worth all that fat!

So, when I knew I wanted to top my Savory Breakfast Crepes  with Hollandaise Sauce,  I was determined to make a skinny and more flavorful Hollandaise version.  

To make this Healthy Hollandaise Sauce recipe, I substituted the butter with one cup Greek yogurt and added some seasonings and the results are incredible! It’s rich and creamy and has so much flavor, you won’t feel cheated it’s not the real thing! 

In fact, you will never believe this isn’t the full fat version of Hollandaise Sauce! It tastes lusciously decadent with only a fraction of the fat and calories. You may even find yourself LOVING this Healthy Hollandaise Sauce more than the full fat version – I know I do!

Homemade Hollandaise Sauce Ingredients

This Healthy Hollandaise Sauce makes up for the lack of butter with the rich Greek Yogurt and adept seasoning. The seasonings aren’t overwhelming, but rather delightfully flavorful so you don’t even miss the butter!   

This healthy hollandaise sauce requires just a handful of pantry ingredients and seasonings. You will need: 

  • Plain Greek yogurt: Fat free, low fat or regular Greek yogurt are all delicious. 
  • Egg yolks: Gives this quick hollandaise its signature yellow color and makes it ultra creamy.
  • Lemon juice: Freshly squeezed will deliver the best flavor.
  • Garlic: Don’t add more than the recipe calls for. This delicate sauce can easily be overwhelmed by garlic.
  • Dijon mustard: Dijon has more of a kick to it than yellow mustard.
  • Spices: I used a mixture of ground cumin, paprika, red pepper flakes, dried basil, salt, and ground pepper.
  • Granulated sugar: You need just ½ teaspoon to balance out the flavors in this healthy hollandaise sauce.

How to Make Homemade Hollandaise Sauce

  1. Beat ingredients together over a double broiler.  Add yogurt, lemon juice, and egg yolks over a double broiler and beat to combine.  If you don’t have a double broiler – no problem!  You can place a strainer over a saucepan and place a bowl in the sieve, just like I did in these photos. 
  2. Stir until thickened. Heat the mixture over approximately 1″ simmering water, stirring frequently, for 15 minutes, or until sauce has thickened. 
  3. Stir in seasonings.  Stir in Dijon (starting with 1 teaspoon), cumin, paprika, red pepper flakes, salt, pepper and basil. Taste and add approximately ½ teaspoon sugar, more or less depending on how “sour” your yogurt is. Taste and add additional Dijon, salt, pepper and/or red pepper flakes if desired.   That’s it for Healthy Hollandaise Sauce -SO easy and SO delicious!  

Tips for Making Homemade Hollandaise Sauce

  • Do NOT use regular yogurt as it is not nearly as thick as Greek yogurt.
  • You need 3 egg yolks for this recipe. Save the egg whites for another recipe, or use to make an egg white omelette.
  • When you set up the double boiler, make sure the bowl the ingredients are whisked in is NOT touching the hot water. If the bowl touches the water, you’ll scramble the egg yolks.

Can You Prep This Quick Hollandaise Sauce in Advance?

This easy hollandaise is best prepared right before serving and should take less than 15 minutes to make.  If you need to make it a little in advance, then keep the sauce warm until serving by placing the blender container in a pot of hot water.  You can keep in hot water for about one hour then replace the hot water.  Instructions for reheating below.

HOW TO STORE Healthy HOLLANDAISE SAUCE

This Healthy Hollandaise Sauce recipe should be refrigerated within 1 ½ hours of cooking in an airtight container then can be reheated per instructions below.

How to Reheat HOLLANDAISE SAUCE 

  • Microwave:  Add healthy hollandaise sauce to a microwave safe bowl.  Microwave Sauce at 50% power in 15-second increments just until warm – BUT NOT HOT, whisking in between increments.
  • Stovetop:  Place the homemade hollandaise sauce in the top pan of a double boiler or in a bowl set over a saucepan of simmering water and heat just until warm, stirring often.

Can You Freeze Hollandaise Sauce?

I don’t recommend freezing this homemade hollandaise since it contains so much dairy. I worry it’d split once frozen!

    This was incredibly tasty! Better than any “real” hollandaise I’ve ever had. I did use non fat geek yogurt and added about a 1/2 teaspoon of corn starch to thicken it up. Turned out amazing and very filling for my eggs benedict!

    Hi Jen. Thank you very much. I never heard about Hollandaise sauce I until I was looking at Leek and Prawn Gratin recipe on the Good Food website. Do you know if this sauce can go on a recipe that will be cooked, please? Actually, think on this Leek and Prawn recipe it will be grilled in the grill oven. I really want to make it the day after tomorrow. Many thanks for sharing this recipe. I will try it.

    Can you please explain the first part of processing? Do you start to beat ingredients cold and late to stir over heat, or you do in a pot over boiling water from the beginning . The recipes is exactly what I am looking for. Less fat variation of my favourite sauce over asparagus. Thank you.

    I made this today to top poached eggs and asparagus. Although I wouldn’t call it “hollandaise”, I do consider it to be a more than suitable substitute! It was delicious and I am going to use the left overs to make egg salad for sandwiches instead of light mayo. I didnt have paprika so I used a dash of chipotle. If following Weight Watchers, this sauce is 0 Smart Points!

    I cut the recipe in half to serve over flank steak tournedos for the two of us. I ended up adding 3 X the amount of lemon juice because we really like a lemony flavor to our hollandaise. At first I thought it didn’t taste anything like hollandaise, so that’s when I added the extra lemon juice. At the end, I whisked in half a tablespoon of butter. It was very good.
